Mix up a big batch of this elderflower tonic syrup with some sparkling water for your next big gathering. It makes for a flavorful non-alcoholic beverage option that can easily be dazzled with a splash of gin.
This recipe is for a elderflower tonic syrup that is for mixing into a beverage and can be stored in the fridge for 6 months to a year, not that it will last that long.
Elderflower Tonic Syrup Recipe
Yield: 4 cups
Ingredients:
1 oz cinchona officinalis
1/2 oz green cardamom
1/2 cup elderflower
1 TBSP pink peppercorns
1/4 cup citric acid
3 cups sugar of choice
1 lemon, zest & juice
1 orange, zest & juice
1 lime, zest & juice
4 cups water
Instructions:
Add all ingredients except citric acid to a medium pot on the stove top.
Bring to gentle simmer, stirring occasionally to dissolve sugar. Turn heat to low and simmer for 25 minutes.
Strain tonic through a mesh strainer, then again through a cheesecloth lined strainer.
Return to pot and stir in citric acid.
Bottle and chill in fridge for up to 6 months.

St. George spirits in the Alameda, California makes a well balanced botanical gin that can easily be sipped on. My favorite is their St. George Terroir Gin with the Botanivore Gin being a close second. But honestly I love every St. George spirit, even the vodka and for me that is saying something!
Ways to use the syrup:
Add all ingredients to a glass and stir
Garnish options: cucumber slice, lime wedge, edible flower, mint or rosemary sprig

1.5 ounces of gin
1/2 to 1 ounce of elderflower tonic syrup
4 to 6 ounces of sparkling water

1 ounce St Germain
1/2 to 1 ounce of elderflower tonic syrup
4 to 6 ounces of sparkling water

1 oz elderflower tonic syrup
1 oz seedlip (non-alcoholic spirit)
